A Delicious Oaty Treat

Don't you hate it when you sit down with a cuppa and all you want is a dunkable biscuit, but your cupboards have let you down?

We recently discovered havreflarn, a buttery and sweet Scandinavian oat crisp biscuit that are easy enough to bake any day of the week. What's more, you are bound to have all the ingredients in your cupboard at any given time. They are the perfect accompaniment to your afternoon cup of tea! But, be warned, they are more than a little addictive.

INGREDIENTS:

100g butter
100g oats
150g caster sugar
1 egg
1 tbsp plain flour
1 tsp baking powder

METHOD:
  1. Preheat the oven to 175°c and line a couple of trays with baking paper
  2. Melt the butter in a saucepan and then mix in the oats
  3. In a separate bowl, whisk together the sugar and egg
  4. Add the butter and oats to the egg and sugar along with the flour and baking powder
  5. Mix well
  6. Spoon teaspoons of the mixture onto the trays, leaving plenty of space for the biscuits to spread
  7. Bake for 6 to 7 minutes or until golden brown
  8. Allow to cool on the tray before removing from baking paper (I usually use a metal spatula to help unstick them from the tray)
  9. Optional extras: For added flavour, add a pinch of ginger spice or orange zest to the mixture before baking. You can also drizzle the biscuits with melted chocolate once cool – pop them in the fridge to allow the chocolate to solidify before serving.
